Three restaurants matched to the conversation rather than the cuisine, with the one to book.
This is a working dinner with a document on the table at some point. That single fact rules out most of the restaurants you would otherwise pick: you need a room quiet enough to hear a hesitation, a table that is not communal, and a bill that can be settled without a performance.
It is the only one of the three with a separate back room, it seats five at a square table rather than a long thin one, and it will take the bill discreetly at the pass. The higher rated option is a beautiful room in which you will not be able to hear the person opposite you.

Oostgracht is the best known and the highest rated of the three. It is a single hard room with a long communal centre table and it gets genuinely loud after eight, which is the hour your dinner becomes a conversation rather than a meal.

Ask for the back room specifically when booking, not on arrival. Five at a square table, two vegetarian mains, bill settled at the pass. Roughly USD 92 a head with wine.
Huis Verlaat
Quieter and grander, and the set menu has no vegetarian main. They will cook around it with notice, but asking a guest to be accommodated is a worse start than choosing somewhere that already works.
Oostgracht
Excellent restaurant, wrong dinner. Keep it for a celebration where the volume is an asset rather than an obstacle.

Fifteen minutes early. Sit facing the door, take the seat with your back to the room so your guests get the view, and settle the wine choice before anyone arrives.

After the mains have gone, not during. Bringing paper out over a starter makes the meal feel like a pretext, which it partly is, and everyone knows it.
